Spelt Hot Cross Buns
These hot cross buns are made with spelt flour and coconut palm sugar. Best served warm!
For the Buns:
sprouted spelt flour
fast-acting yeast
ground allspice
ground cinnamon
ground nutmeg
whole milk
egg
unsalted butter, cut into small cubes
coconut palm sugar
sultanas (or raisins)
dried currants
dried unsweetened cranberries
orange zest
salt
For the Eggwash:
egg
egg yolk
milk
For the X Topping:
all-purpose flour (you can use spelt flour, but it will affect the color)
unrefined powered (icing) sugar
milk
olive oil
vanilla
For the Glaze:
1 cup (200g) unrefined sugar
½ cup (120g) water
1 whole nutmeg
1 whole star anise
3 whole cloves
½ a vanilla pod, split lengthwise
