Spinach packed Spätzle (or spaetzle) with oven-roasted veggies and a blue cheese sauce. Can comfort food get any better than this? I do not think so.
Ingredients
vegetables of choice (I used broccoli, tomatoes and mushrooms)
a bit of olive oil
salt and herbs of choice
flour
eggs
water
spinach
milk (plant-based milk is fine)
blue cheese
salt, pepper, nutmeg, to taste
