These spiralized latkes are a healthy and colorful take on traditional potato latkes for Hanukkah. This version used sweet potato and parsnip noodles for the latkes and they’re baked instead of fried.
Ingredients
1 medium sweet potato, peeled and spiralized
1 large parsnip, peeled and spiralized
4 cups boiling water
1 egg + 1 egg white, whisked
2 scallions (green part only), chopped
½ teaspoon garlic powder
½ teaspoon sea salt
½ teaspoon ground pepper
1 teaspoon oil for greasing the pan
plain Greek yogurt and applesauce for serving
