This crisp salad is a great way to enjoy your spring veggies! It includes roasted asparagus, arugula, peas, pine nuts, and parmesan cheese all complemented with a homemade honey mustard vinaigrette.
Ingredients
2 handfuls of baby spinach
2 handfuls of arugula
1/2 pound asparagus
1/2 cup peas (fresh or frozen; fresh peas should be shelled)
1/4 cup pine nuts
2 oz of parmesan cheese, shaved
1 tbs honey
1 tbs mustard
2 tbs white wine vinegar
4 tbs olive oil
Salt and pepper to taste
