Squash Risotto with Maple Cheddar Cheese

Squash risotto with maple cheddar cheese. Omit the cheese for a vegan dinner option!
Ingredients
1 small acorn squash, peeled and diced
2 shallots, sliced thinly
2 garlic cloves, minced
1 cup arborio rice
4-5 cups vegetable broth
1 cup grated maple cheddar cheese (if you can’t find maple cheddar, use normal cheddar and add a tablespoon or two of maple syrup)
salt and pepper, to taste
