Sticky Pecan French Toast Muffins

Way less fuss than traditional French Toast! Make breakfast a relaxing time with those delicious baked treats!

6 large OR 8-10 small slices brioche (or other soft white bread), cubed
2 tablespoons melted butter
4 tablespoons brown sugar
1/3 cup pecan nuts, roughly chopped

For the Egg Mixture:
3 eggs
1/2 cup milk
2 tablespoons maple syrup
2 tablespoons brown sugar
1/2 teaspoon cinnamon
Pinch of ground vanilla OR a few drops vanilla extract

To Sprinkle:
1 tablespoon brown sugar
