Ingredients
Pie Crust:
2 1/4 cups flour
1/2 cup coconut oil
1 teaspoon salt
1 tablespoon coconut sugar
1/3 cup water
The Filling:
200 g rhubarb stalks (peeled and diced)
200 g strawberries (diced)
3/4 cup caster sugar
1/4 cup starch
1/4 teaspoon ground ginger
Meringue:
fluid from one 400g can of legumes
1 teaspoon lemon juice
1 cup confectioners sugar
