Granola should be healthy, but unfortunately most store-bought varieties are loaded with sugar and oil. As well as being free from both sugar and oil, this granola is also vegan!
1 overripe banana
2 teaspoons ground cinnamon
1 teaspoon vanilla extract
Pinch of salt
2 cups rolled oats (gluten-free if necessary)
1/3 cup shredded coconut (unsweetened)
1/3 cup chopped walnuts or pecans
