Summer Rolls with Spicy Peanut Sauce

No cooking is required for these vegan, low calorie summer rolls. Oh, and the sauce is crazy amazing.
Ingredients
8 rice paper rolls
1 yellow bell pepper, seeded and thinly sliced
1 red bell pepper, seeded and thinly sliced
16 leaves butter lettuce
2 carrots, shredded or spiralized
14 oz firm tofu, sliced into 8 bricks
1 avocado
1 c red cabbage, thinly shredded
2 tbs fresh mint, chopped
2 tbs fresh basil, chopped
2 tbs fresh cilantro, chopped
2 tbs natural, no salt added peanut butter
2 tbs sriracha
2 tbs soy sauce
1 tbs rice vinegar
1 tbs minced ginger
1 tbs minced garlic
1 tsp sesame oil
