Super Moist Spiced Pumpkin Bread
Lightly sweet and fluffy, this Super Moist Spiced Pumpkin Bread is perfect for breakfast, snacking or dessert topped with tangy maple cream cheese frosting.
For the Pumpkin Bread:
⅔ cup pumpkin puree (not pumpkin pie filling)
2 large eggs
1 cup plain, low fat Greek yogurt
2 Tbsp coconut oil, melted
¼ cup maple syrup
¼ cup light brown sugar, lightly packed
1 Tbsp vinegar
1½ tsp baking soda
½ tsp salt
½ tsp each ground cinnamon, nutmeg and ginger
1½ cups whole wheat flour
½ cup chopped walnuts (optional)
For the Maple Cream Cheese Frosting:
4 ounces neufchatel cream cheese
3 Tbsp maple syrup
1-2 Tbsp milk as needed to thin
More chopped walnuts for topping (optional)
