Sweet Ginger Tofu-Carrot Stir Fry
This quick and crazy easy meal is not only delicious, but can also be whipped up in fifteen minutes. Carrots and tofu are diced, and cooked with a light and mildly sweet ginger sauce – the perfect meal for when the idea of cooking dinner seems like an impossible task. It’s fast, easy and super delicious. Enjoy!
1 cup tofu, cubed
1 cup carrots, diced
2 tablespoons rice vinegar
2 cloves garlic, minced
1 tablespoon ginger, minced or finely grated
1 tablespoon honey (you could substitute agave, maple syrup or another natural sweetener of the same consistency is you don’t eat honey)
1 tablespoon olive oil
Large pinch sumac
Dash of turmeric
Salt and pepper, to taste
