Ingredients
1 cup uncooked quinoa
2 small sweet potatoes
1 (15 ounce) can black beans, drained and rinsed
1/4 cup hemp seeds
2 tablespoons sunflower oil (or other high heat oil)
2 cups spinach leaves, sliced
avocado/cheese for topping
Cilantro-Lime Dressing
1 cup cilantro, finely chopped
3 tablespoons olive oil
juice of 2 limes
1/4 teaspoon salt
1/2 teaspoon cumin
1 teaspoon green pepper sauce (or other hot sauce)
