Sweet potato and millet patties with a sweet & tangy blackberry salsa with fresh herbs. Perfect dinner meal for everyone. Naturally gluten-free and vegan.
Ingredients
2 small sweet potatoes
1½ cup cooked millet
½ cup sunflower seeds
2 tbsp chia seeds (or 1 egg)
¼ cup sesame seeds
1 tbsp tahini
2 tbsp coriander seed, crushed
½ lime, zest + juice
salt and pepper to taste
200 g fresh blackberries (or 300 g frozen)
1 large handful fresh coriander, chopped
1 large handful fresh basil, chopped
1 red chili pepper, chopped (or ½ tsp dried chili)
½ lime, juice
2 tbsp olive oil
