Tangy Tomato and Basil Relish
A recipe for super easy and long lasting Tomato and Basil relish. This stuff keeps for around a year, its yummy on cheese plates, sandwiches, on toast and as a side to anything. A great healthy alternative to ketchup and other processed sauces.
1.5kg tomatoes (I use gourmet fields but really any sort work as well, it just depends what kind of flavour you are going for!)
500g red onions, sliced
1 teaspoon salt
2 cups raw brown sugar
¾ tsp chilli powder
2 tsp tumeric
1 3 cm piece ginger, chopped finely
1 cup apple cider vinegar
1 cup white vinegar
½ cup fresh green basil leaves, chopped coarsely
4 250 ml jars, sterilised
