These Toasted Coconut Pumpkin Spice Donuts are packed with fall flavor and are naturally vegan!
Ingredients
1 cup plus 2 tablespoons whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup milk of choice
1 teaspoon apple cider vinegar
1 chia egg (1 tbsp chia seeds mixed with 3 tbsp water)
1 cup pumpkin puree
1/4 cup maple syrup or honey
1/2 cup powdered sugar
1 tablespoon milk of choice
1 teaspoon vanilla extract
1/2 cup shredded coconut (I used half sweetened, half unsweetened)
