Tomato & Olive Tofu En Papillote

Ingredients

1/5 block of Tofu, liquid pressed out
1/4 cup Cherry Tomato, chopped
1/4 cup olives, pitted, chipped
1/4 cup mushrooms, any kind, chopped
1/4 cup + 2 tablespoons lemon juice
2 tablespoons fresh Parsley, chopped
1.4 teaspoon Salt
1/4 cup quinoa, uncooked
1/4 cup water
1 square parchment paper
Pepper to taste
