Triple Bean Flautas
These cheesy veggie flautas are baked to crispy perfection! They’re great for a weeknight dinner or even your Cinco de Mayo celebration and are freezer friendly to boot!
1/2 cup red onion
1/2 cup white onion
2 TBSP oil [olive, coconut, or avocado]
1 large bell pepper, diced
2 cups black beans [or 1.5 cans]
1.5 cups chickpeas [or 1 can]
1.5 cups cannellini or pinto beans [or 1 can]
1/4-1/2 cup salsa verde
1 TBSP chili powder
1 TBSP garlic powder
1 TBSP cumin
1/8 tsp cayenne pepper or paprika
1/8 tsp oregano
salt, to taste
2-3 TBSP fresh cilantro, chopped
2-4 cups of your favorite Mexican cheeses, coarsely grated/shredded
25-30 small yellow corn tortillas
