Tropical breakfast quinoa brings a spark of summer to a chilly morning with pineapple, coconut, strawberries and pistachios.
Ingredients
1 cup quinoa
1 1/2 cups water
3/4 cup milk or milk alternative (I used hazelnut milk)
1 tablespoon brown sugar
1 teaspoon vanilla extract
3/4 teaspoon ground ginger
1/2 teaspoon ground cinnamon
3/4 cup frozen sliced strawberries
1/3 cup unsweetened coconut flakes (see note)
1/3 cup dried pineapple
2 tablespoons flax seeds
2 tablespoons pistachios, chopped
