These twice baked potatoes are hearty and healthy!
Ingredients
4 baking potatoes (organic if possible)
1 head broccoli, diced into small pieces
1 medium carrot, shredded
1 medium sweet red pepper
2 tbsp nutritional yeast (optional)
1 tbsp mac nuts (you can also use cashews or sunflower seeds)
1 tbsp lemon juice
1 clove garlic
Salt and pepper to taste
