Ube Buckwheat Rolls from “Wonderland”
Take a trip to “Wonderland” with this Taylor Swift 1989-inspired recipe. Mega-fluffy and gluten-reduced buns filled with purple sweet potato. You’ll go mad for more.
BUCKWHEAT DOUGH:
1 cup your favourite non-dairy milk
¼ cup maple syrup
2 ¼ tsp traditional yeast (1 8g package)
1 cup buckwheat flour
1 1/4 to 1 3/4 cup all purpose flour*
¼ tsp salt
¼ cup coconut oil, melted and slightly cooled
1 tsp vanilla extract
UBE FILLING:
1 medium ube (purple sweet potato)
1/4 cup coconut milk
1/4 cup maple syrup
1/4 tsp pink Himalayan salt
EGG WASH (Optional):
1 egg + 1 tbsp almond milk
PURPLE GLAZE:
1 tbsp reserved ube puree (see recipe)
1 to 2 tbsp coconut cream
