Vegan and gluten-free buckwheat + oat flour waffles with peaches and nectarines. The best kind of breakfast/brunch!
Ingredients
DRY INGREDIENTS:
1 cup buckwheat flour
3/4 cup oat flour
3 teaspoons baking powder
1 1/2 teaspoons arrowroot powder or potato starch
pinch of salt
coconut oil, to grease the waffle maker
fruit and maple syrup for serving
WET INGREDIENTS:
1 cup almond milk
1/2 cup water
2 teaspoons apple cider vinegar
2 tablespoons maple syrup
2 flax eggs (2 tablespoons ground flax + 3 tablespoons warm water)
1 teaspoon vanilla extract
