Vegan Char Siu Bao
Vegan Char Siu Bao, No dairy, no meat, but tastes like the real deal!
For the Dough:
1 cup warm water, separated in two 1/2 cup portions
1 teaspoon active dry yeast
3 cups all purpose flour or bread flour, divided
¼ cup coconut oil
½ teaspoon vital wheat gluten (can be eliminated if using bread flour)
½ cup sugar
Pinch of salt
For the Filling:
2 tablespoons oil
1 medium onion, diced
1 block extra firm tofu (drained, pat dry and cut into ½-inch cubes)
2 ½ tablespoons soy sauce
½ teaspoon dark soy sauce (optional)
1 tablespoon sugar
1/2 teaspoon salt
1 teaspoon sesame oil
1 tablespoon hoisin sauce
white pepper, to taste
1 ¼ cups water or vegetable stock
2 tablespoons flour
Sugar water to Coat the Buns:
1 tablespoon sugar
2 tablespoons warm water
