This soup is so simple and easy to make. Sauté, simmer, and purée, that’s it! This is the perfect no-fuss lunch for summer guests!
Ingredients
1 tbsp vegan butter (or olive/coconut/canola oil)
½ cup (1/2 small) red onion, chopped
½ cup (1 rib) celery, chopped
½ cup (1 small) carrot, peeled and chopped
2 cloves garlic, minced
2 cups chopped asparagus
3 cups (1/2 1.5lb bag) The Little Potato Company’s Blushing Belles
¼ tsp salt
½ tbsp flour
3 cups vegetable broth
¼-1/3 cup vegan cheddar cheese
2 tbsp nutritional yeast
1 cup unsweetened almond or soy milk
