A mix of aromatic Indian spices, hearty cauliflower, cashew cream and silky coconut milk come together in this ultra creamy, flavorful – and vegan! – soup.
Ingredients
1/2 cup raw cashews
2 teaspoons coconut oil
1 medium onion, diced
1 large head cauliflower, chopped into small bite-sized pieces
1 can coconut milk (can use light for lower fat)
2 Tablespoons curry powder
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon ground cinnamon
2 teaspoons turbinado sugar, plus more for garnish
salt to taste
1/3 cup chopped fresh cilantro for serving
