1 Tbsp Olive oil
1 Onion, diced
1/2 Orange or yellow pepper, diced
1 Clove of garlic, minced
1 x 400g/14oz Can of chopped tomatoes
Handful of cherry tomatoes, halved (optional)
1/2 C Water
1 tsp Coconut sugar
1/2 tsp Salt
400g/14oz pkg Vegan gnocchi
50g/2oz Spinach, chopped
Handful of basil leaves, roughly chopped
1 x recipe Vegan Moxarella
