Vegan Maple Jalapeño Cornbread

These deliciously moist cornbread muffins have a wonderfully spicy/ sweet flavor combination and pair perfect with chili.
Ingredients
1 cup almond milk
2 teaspoons apple cider vinegar or white vinegar
1 flax egg (1 tablespoon ground flax seed mixed with 3 tablespoons warm water)
1/3 cup Earth Balance or butter melted
3 tablespoons maple syrup
2 tablespoons unsweetened apple sauce
1 teaspoon vanilla extract
1/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1.5 cups white flour
1 cup corn meal
1/2 cup frozen corn kernels thawed
1 jalapeño seeded and minced
