Vegan Mashed Red Potatoes & Kale + Mushroom Gravy
A fresh and healthier take on the classic recipe, topped with heavenly gravy!
Mashed Potatoes:
6 cups of potatoes, chopped into chunks (I left them with skin on but you can peel if desired)
2 shallots, chopped
4 cloves garlic, minced
4 Tbsp olive oil (divided into 2 Tbsp + 2 Tbsp)
6 cups PACKED chopped kale
1/2 cup canned coconut milk, full fat (more if creamier consistency is desired)
1/2 tsp salt
1/2 tsp pepper
Gravy:
5 Tbsp olive oil (divided into 2 Tbsp + 3 Tbsp)
2 cups chopped mushrooms, any kind
2 cups chopped yellow onion
3 cloves garlic, chopped
1/2 cup brown or white rice flour
1/2 cup tamari or coconut aminos for soy free
2.5 cups water
2 tsp fresh thyme
2 tsp fresh rosemary
1 tsp fresh black pepper
