A healthified take on that mayo-and-egg laden classic.
Ingredients
2 ears corn, shucked and kernels cut off
1 lb red or russet potatoes, washed (skins on or off, depending on your preference)
1 1/2 tsp red wine vinegar
1 1/2 tbsp extra virgin olive oil
2 tbsp water
1/2 tsp sea salt
1 tsp garlic, minced
1 1/2 tbsp dijon mustard
1 cup black beans
2 tbsp yellow or red onion, finely chopped
1/4 cup fresh dill, chopped
a pinch of cumin and paprika
