Vegan Pear Almond Tart
This tart is a bit of a labor of love, but trust me, the pear and almond combination is unbeatable.
For the Crust:
1 teaspoon ground flax seed mixed with 2 teaspoons warm water
½ cup powdered sugar
¼ cup blanched slivered almonds
¼ teaspoon salt
9 tablespoons (1 stick plus 1 tablespoon) Earth Balance/ butter, room temperature
1¼ cups all purpose flour
For the Almond Filling:
1 flax egg (1 tablespoon ground flax seed mixed with 3 tablespoons warm water)
⅔ cup blanched slivered almonds
1 tablespoon all purpose flour
7 tablespoons sugar
6 tablespoons (3/4 stick) Earth Balance/ butter, room temperature
For the Pears:
4 cups water
1¼ cups sugar
1½ tablespoons fresh lemon juice
3 medium-size firm but ripe Bosc pears, peeled (each about 7 ounces)
