To make these vegan sweet potato and black bean enchiladas you don’t need to buy expensive products, all the ingredients are cheap and really easy to get.
Ingredients
Extra virgin olive oil
2 cloves of garlic
½ onion
¼ cup red pepper (40 g)
¼ cup corn kernels (40 g)
½ cup cooked black beans (100 g)
½ cooked potato
2 cups enchilada sauce (520 g)
⅛ tsp cayenne powder
1 tsp ground cumin
1 tsp coriander powder (optional)
Juice of ½ lime (or lemon)
4 tortillas
5.3 ounces or 150 grams vegan cheese slices (optional)
