Tofu-Halloumi w/ black sesame and sumac soba noodles. Vegan and gluten-free grilled cheese dinner recipe.
Ingredients
Tofu halloumi
300 g ( 2 blocks) tofu, extra firm
2 tbsp nutritional yeast
2 tsp dried mint
1 handful of fresh mint, roughly chopped
½ lemon, juice
1 tsp salt
black pepper, to taste
1 tbsp olive oil
Soba noodles:
200 g soba noodles
2 tbsp black sesame seeds, roasted
1 tbsp nutritional yeast
2 tsp sumac
½ tsp dried chili
3 tbsp sesame oil or olive oil
