This vegetarian chili made with Anasazi beans is easy and fast! Make ahead or make a double batch for a hearty dinner to serve with your favorite toppings.
Ingredients
2 tablespoons olive oil
1 small onion , diced (about 225 grams)
1 teaspoon salt
3 cloves garlic, minced
2 green bell peppers, stems removed, seeded and diced (275 grams)
12 ounces Smart Ground or your favorite meatless crumble
1 teaspoon chile powder
1 28-ounce can whole fire roasted tomatoes
1-2 jalapeno peppers, stems removed, seeded and diced
2 cups cooked Anasazi beans
1 1/2 cups cooked kidney beans (14.5-ounce can)
2 cups cooked corn
