Vegetarian Pineapple Poke Bowls
These Vegetarian Pineapple Poke Bowls are a refreshing, meatless take on this wildly popular Hawaiian dish.
Tofu:
1 14 oz (400 g) block of firm tofu
¼ cup (60 mL) sesame oil
¼ cup (60 mL) soy sauce
2 Tbsp (30 mL) pineapple juice
1 Tbsp (15 mL) rice vinegar
1 tsp freshly grated ginger
1 tsp sesame seeds
¼ tsp chili garlic sauce (or ½ tsp sriracha + ½ clove garlic)
The juice + zest of 1 lime
Bowls:
1 cup (180 g) chopped pineapple
1 avocado, sliced
Juice of 1 lime
½ cup (120 g) sliced cucumber
1 carrot, shredded
2 cups (390 g) cooked rice (white or brown)
For serving:
½ red fresno chili, seeded and sliced
Slice of lime
Chopped chives
Sesame seeds
