Vegetarian Quinoa Bibimbap – Here’s a healthy twist on the classic Korean dish.
Ingredients
2 cups of cooked quinoa
1 tbsp + 2 tsp sesame oil
1 tbsp Bragg’s or coconut aminos
2 cloves of garlic, minced
1 tsp of minced ginger
salt and pepper to taste
2 cups of thinly sliced or julienned vegetables such as carrots, zucchini, shiitake mushrooms, asparagus and/or celery.
2 cups spinach leaves.
2 eggs, cooked sunny side up
2 tbsp sesame seeds
2 tbsp sliced green onions
Optional: Korean chile paste (gochujang) to taste
