Ingredients
2 large eggplants
4 cups packed fresh spinach, chopped
3 cups tomato sauce
1 cup raw sunflower seeds
1/2 cup raw cashews
3 tablespoons nutritional yeast (divided)
1-2 cloves garlic
1/4 cup olive oil
3 tablespoons lemon juice (divided)
14 oz. package firm tofu (water pressed out)
1/4 cup pesto
salt and pepper
