Veggie Pita Pizza Bites
The perfect vegetarian appetizer for your next party or a quick dinner for two.
4 whole wheat mini pitas
3 teaspoon + 1/2 teaspoon olive oil
2 ounces thinly sliced baby Bella mushrooms (or your favorite type of mushroom)
2 cups loosely packed fresh baby spinach, roughly chopped
1 small shallot, thinly sliced (optional)
1/4 cup whole milk ricotta cheese
1 tablespoon finely chopped sun-dried tomatoes
1/3 cup thinly sliced mini bell peppers (about 5 or 6 whole mini peppers depending on size)
1/4 cup shredded mozzarella cheese
1/4 cup loosely packed fresh basil leaves, thinly sliced
2 teaspoons balsamic vinegar
