These veggie quinoa sushi rolls may look exotic, but they are actually very easy to make. They have a light pleasing flavor yet are surprisingly filling!
Ingredients
4-5 nori sheets
1 cup quinoa
2 cups water
1 tsp ground ginger
¼ tsp sea salt
1 tbs rice vinegar
1 tbs agave nectar
½ avocado
½ medium cucumber
½ cup baby carrots
1 cup lightly packed baby romaine
Reduced sodium tamari soy sauce to taste
