A hearty fall and winter salad with quinoa, seasonal vegetables, pomegranate, and garlic kale.
Ingredients
1 cup dry quinoa (yields about 2 cups cooked quinoa)
¼ cup olive oil (reserve 2 tablespoons for the dressing, the rest for cooking)
½ medium red onion
2 cloves garlic, minced
8 cups kale
Juice of 2 lemons
Zest of 1 lemon
½ teaspoon sea salt
Freshly ground black pepper
½ cup chopped parsley
Seeds of 1 pomegranate (about ¾ cup seeds)
