A healthier pound cake made with greek yogurt, olive oil and whole clementines that are pureed – no zesting, juicing or dividing orange segments!
Ingredients
2 whole clementines
4 large eggs, at room temperature
3/4 cup greek yogurt
1 teaspoon pure vanilla extract
1½ cups all-purpose flour
1 cup sugar
1 Tablespoon poppy seeds
1 1/2 teaspoons baking powder
1/2 teaspoon salt
½ cup extra-virgin olive oil
Glaze:
1 cup powdered sugar, sifted
3 Tablespoons strong brewed earl grey tea
1 Tablespoon honey
1/2 teaspoon earl grey tea leaves
