Cucumber Lentil Salad
The perfect potluck salad: cucumber lentil salad with feta.
2 teaspoons extra virgin olive oil
2 small shallots, finely chopped
2 cloves garlic, thinly sliced
1 cup green lentils, rinsed and picked over
3 cups water
2 bay leaves
¼ teaspoon freshly ground pepper
2 Persian cucumbers, quartered lengthwise then sliced ¼-inch thick
6 small breakfast radishes, halved then thinly sliced
¼ cup + 2 tablespoons finely chopped curly leaf parsley
3 tablespoons fresh lime juice (1-2 limes)
2 tablespoons extra virgin olive oil
½ teaspoon white wine vinegar or apple cider vinegar
½-1 teaspoon salt, to taste
2½ ounces French feta, crumbled
