Grape, almond and mint freekeh salad

A healthy and substantial salad with freekeh and the sweetness of grapes.
Ingredients
LEMON AND CUMIN VINAIGRETTE:
1 tbs lemon juice
½ tsp Dijon mustard
1½ tbs extra virgin olive oil
¼ tsp ground cumin
sea salt and pepper to taste
SALAD:
½ cup freekeh
2 cups water
½ cup red seedless grapes, halved
3 spring onions, finely chopped
½ medium Lebanese cucumber, sliced on diagonal and halved
½ cup radish leaves or rocket (arugala)
¼ mint leaves
2 tbs toasted flaked almonds
salt and pepper
