Oatmeal perfected. Toasted oats cooked in coconut milk, topped with a wild blueberry-chia jam and toasted almonds
Ingredients
1 tablespoon coconut oil
3 cups rolled oats
2 cans of coconut milk (low fat or full fat)
1 1/2 teaspoons vanilla
Large pinch of salt
1 cup almonds, roughly chopped
Chia jam:
3 cups frozen wild blueberries
1 tablespoon lemon juice
2 tablespoons water
3 tablespoons chia seeds
