Lentil Sweet Potato Arugula Salad. A quick, vegan, no-fuss meal. Flavored with cumin, coriander, mustard and red wine vinegar.
Ingredients
2 tablespoons olive oil, divided
½ teaspoon coriander seeds, crushed
½ teaspoon cumin seeds, crushed
½ teaspoon mustard seeds
1 cup onion, finely chopped
2 cloves garlic, finely chopped
1 cup black lentils
3½ cups vegetable broth
3 large sweet potatoes, washed and cut into 1-inch chunks
½ teaspoon sea salt, divided
Large bunch of arugula, washed and torn into bite-sized pieces
2 teaspoons red wine vinegar
Black pepper to taste
