Quinoa Chickpea and Spinach Soup

A hearty vegetable one-pot soup that’s packed full of healthy protein from quinoa, spinach and chickpeas!
Ingredients
1 tablespoon olive oil
1 yellow onion, diced
3 cloves garlic, minced
3 carrots, chopped
3 cups fresh spinach, chopped
2 ounces dry white wine, (1/4 cup)
5 cups vegetable broth
14 1/2 ounces canned diced tomatoes, with juices
2 sprigs fresh rosemary
2 sprigs fresh thyme
2 sprigs fresh sage
1/2 cup dry quinoa
1 15 ounce can chickpeas, drained and rinsed
