This easy baked gnocchi with mozzarella, tomatoes and fresh herbs is a comforting dinner that can be made in 30 minutes!
Ingredients
1 lb package store-bought gnocchi
2 tablespoons extra-virgin olive oil
1/2 cup thinly sliced shallots
4 garlic cloves, peeled and minced
1 tablespoon tomato paste
1/2 tsp. salt
1/2 tsp. black pepper
1/4 tsp. ground nutmeg
2 cups fresh cherry tomatoes
1 (15-ounce) can tomato sauce (I used no salt added tomato sauce)
2 tablespoons balsamic vinegar
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
1 tablespoon heavy cream
8 ounces fresh mozzarella cheese, torn into pieces
