Amazingly creamy breakfast bowl made with cauliflower and topped with maple glazed walnuts.
Ingredients
½ cauliflower, about 1 cup cauliflower florets
1½ cup coconut milk (or unsweetened oat or almond)
3 tbsp maple syrup (or sweetener of choice)
1 tsp vanilla extract
½ tsp cinnamon
1 pinch of salt
12-14 walnuts, unsalted
2 tbsp maple syrup + more for serving
2 tbsp shredded coconut flakes
