An easy kale and quinoa salad with fresh apricots, red onion, almonds and an apricot-mustard dressing.
Ingredients
1 cup quinoa
1 3/4 cups water
3 tablespoons extra-virgin olive oil
3 tablespoons balsamic vinegar
2 tablespoons apricot preserves
1 tablespoon course-grain Dijon mustard
2 garlic cloves, minced
1/4 tsp. salt
1/4 tsp. black pepper
4 cups kale, washed and thinly sliced
6 fresh apricots, pitted and quartered
1/4 cup thinly sliced red onion
1/3 cup almonds
