This easy avocado gazpacho with curried chickpeas is ready in 30 minutes and provides some refreshment on hot summer days.
Ingredients
For the gazpacho:
250 mL water
1 avocado
1/2 cucumber, peeled
1/2 green apple
Juice of 1/2 lime
2 branches of cilantro
5 leaves of mint
1 1/2 Tbsp maple syrup
Salt
Cayenne pepper
For the curried chickpeas:
100 g chickpeas
Sesame oil
2 Tbsp panko bread crumbs
2 Tsp curry powder
Salt
