Quick & easy vegan Cashew Basil Cheese – perfect substitute for ricotta and ready in 10 minutes.
Ingredients
2 cups raw cashews, ideally soaked in hot water for at least 10 minutes
1/2 cup almond milk
2 tsp minced garlic
1/4 cup nutritional yeast
3/4 tsp sea salt
1/4 tsp pepper
1 1/2 Tbsp fresh lemon juice
1/2 cup tightly packed fresh basil (or more if you want!)
