Decadent Braised Napa Cabbage

Decadent AND healthy. Gently braised cabbage in broth and white wine, finished with a swirl of cream and mustard.
Ingredients
2 tablespoons unsalted butter
1 cup finely diced yellow onion
½ teaspoon caraway seeds
1 teaspoon kosher salt
6 cups thinly sliced Savoy cabbage, and coarsely chopped (divided)
¼ cup vegetable stock
2 tablespoons white wine
2 tablespoons cream
1 teaspoon Dijon mustard
